Eat Wild is delighted to announce an exciting collaboration with Essential Cuisine, renowned for its premium stocks, gravies, and culinary bases. This partnership is set to introduce wild game to a wider audience, spanning gastro pubs, restaurant chains, hotels, schools, universities, hospitals, care homes, and large-scale operators in workplaces, sports venues, and leisure facilities.
The collaboration began with a successful game education day hosted by Eat Wild in June 2024, which included Essential Cuisine and other food wholesalers. During the event, Louisa and Leon from Eat Wild highlighted the versatility and benefits of wild meat, inspiring attendees to incorporate game into their menus. Building on this momentum, the two organisations have worked together to develop a series of innovative recipes for the Essential Cuisine website and accompanying recipe cards. These recipes, designed specifically for large-scale catering, make it easier than ever for chefs to create delicious, game-inspired dishes.
For those seeking inspiration for cooking for large groups, Essential Cuisine’s website is an excellent resource. One standout recipe is their Roast Partridge Breasts with Dauphinoise Potato, Celeriac Purée, and a Port Jus. Visit the recipe at: Essential Cuisine Website.
As part of this collaboration, wild game will take centre stage at the upcoming Pub Chef of the Year Awards, held at the Hotel, Restaurant and Catering Show at Excel London on Wednesday the 19th of March 2025. These awards celebrate the creative use of game in pub menus and provide chefs with an opportunity to showcase their culinary skills and innovation. Finalists will also participate in the Game Up Skill Event, a hands-on workshop scheduled for Tuesday, 4th March 2025, at the RAK Ceramics Design Hub in London. Organised in partnership with the British Institute of Innkeepers, Montgomery Events, Eat Wild, and Essential Cuisine, this event will feature:
Advanced techniques for preparing wild game.
Strategies for maximising flavour and efficiency in pub kitchens.
Creative approaches to modernising game-based dishes for today’s diners.
Through this partnership, Eat Wild and Essential Cuisine are redefining pub dining, positioning wild game as a sustainable, ethical, and delicious choice. By providing chefs with the tools, resources, and inspiration needed to elevate their menus, the collaboration supports British wildlife and promotes environmental stewardship. Together, they aim to bring something truly exceptional to diners across the UK.
