Alongside the incredibly talented chefs Tom Booton of The Grill at The Dorchester, Ian Page , Sodexo Group Executive Chef and Young Chef Ambassador of the Craft Guild of Chefs, and James Buckley, Culinary Director for the UK and Ireland at Levy, Leon showcased the art of plucking, butchering, and cooking partridge and pheasant to a captivated audience of future culinary professionals.
Educating Future Chefs on Wild Game Preparation
This remarkable event brought together students from three colleges, Eastleigh, Fareham and Southampton, creating an amazing opportunity to educate and inspire the next generation of chefs. With hands-on demonstrations and expert guidance, the day highlighted the versatility, sustainability, and rich flavours of wild game, encouraging young chefs to incorporate these ingredients into their culinary creations.
Why Wild Game Matters in Modern Kitchens
Wild game, such as partridge and pheasant, is a nutrient dense meat that offers incredible depth of flavour. By showcasing these techniques, Leon and the team aimed to inspire students to embrace wild game as a cornerstone of modern, sustainable cuisine. The students were enthusiastic and engaged, asking insightful questions and gaining practical skills that will shape their careers in the food industry.
A Collaborative Effort to Promote Culinary Education
The event’s success was made possible thanks to the collaboration between Eastleigh College, the afore-mentioned renowned chefs and Eat Wild. Their expertise and passion for wild game were on full display, creating a dynamic and interactive learning experience. Events like these are vital for fostering creativity and sustainability in the culinary world.
